- 3 tablespoons peanut oil
- 2 cloves garlic, minced
- ¾ pound boneless pork chops, cut into bite-size pieces
- 1 cup leftover cooked rice, preferably several days old
- 2 teaspoons soy sauce
- 1 teaspoon fish sauce
- 1 cup mung bean sprouts
- ½ small white onion, chopped
- 10 grape tomatoes, halved
- 3 dried Thai chile peppers, or more to taste
- ¼ cup chopped fresh cilantro
- 1 egg, beaten
- 1 green onion, chopped
- ¼ teaspoon ground white pepper
- ½ lime, juiced
