- ¼ cup extra-virgin olive oil
- ¼ cup red wine vinegar
- 1 teaspoon honey
- 2 tomatoes, chopped
- ½ sweet onion (such as Vidalia®), chopped
- 1 cucumber, peeled and diced
- 2 carrots, cut into bite-size pieces
- ½ cup diced celery
- 3 cloves garlic, chopped
- 2 green onions, chopped
- 2 tablespoons chopped fresh parsley, or to taste
- 1 ½ teaspoons chopped fresh cilantro
- 1 pinch fresh cracked black pepper, or to taste
